Red kale is known for its beautifully red-hued leaves and stems, peppery flavor and mild bitterness. Baby kale is more tender and delicate than its mature plant so physically massaging the leaves are not necessary. Red curly kale is a nutritional powerhouse and comes packed with calcium, iron, and vitamins.
Red kale is typically used as a green in salads and pairs well with olive oil, lemon juice, and fresh parmesan.
