Zucchini, Goldbar- Most zucchini, Cucurbita pepa, varieties come from Italy, however the goldbar squash was created through genetic modification by plant breeder Dr. Oved Shifriss. The goldbar zucchini is similar in size and shape to a classic green zucchini, but has bright yellow skin and whitish yellow flesh.
Goldbar zucchini can be used interchangeably in any recipe that calls for a yellow summer squash or green zucchini. It can be eaten raw or cooked in both sweet and savory dishes.
Zucchini will keep for about 1-2 weeks in the crisper drawer of your refrigerator.
