Lettuce, Romaine- Romaine has tightly packed, evenly shaped heads connected to a central base with spoon-shaped leaves that are dark green fading to yellow or pale green around the base. Leaves have many folds and creases and the rib is crunchy and juicy with a mild, fresh taste.
Most commonly used in Caesar salads, sandwiches, and burgers, romaine can also be used in heat applications such as grilling or braising. The spoon-shaped leaves are also a perfect vessel for dips, sauces, and fillings. Lettuce cups!
To store heads of lettuce, wrap in a damp paper towel and put the head in a sealed plastic bag, kept cool in the refrigerator. Properly stored heads of lettuce can last a couple of weeks. If your lettuce is not too badly wilted, you can revive it! Crisp it up by soaking it in ice water for a few minutes. Store lettuce away from produce that releases ethylene (pears, avocados, apples) because their gas causes other produce to prematurely age.
