Cauliflower- The word cauliflower is a combination of the Latin words caulis, meaning “cabbage,” and flos, meaning “flower.” This pretty well describes what a cauliflower is: a member of the brassicae family, and a decendent of the wild cabbage. Cauliflower is known for being low in calories and high in fiber, making it a favorite substitute for other starches.
